Questions regarding the recipes
Installment 6 of 42 gives a recipe for Sour Sumava Soup with partial method explanation. I'd really love to have the entire method, using ALL the ingredients. Flour, butter, eggs, cream? Anyone have any ideas?

Serves 4
4 cups water
2-3 tbsp. vinegar
small pinch of salt
4 small potatoes
handful of dried mushrooms
caraway
1 tbsp. butter
1 tbsp. flour
½ cup heavy cream
salt
pinch of sugar
4 hard-boiled eggs, sliced
To a small stockpot, add the water, vinegar, salt and bring to a boil.
Add crushed handful of mushrooms, peeled and chopped potatoes, caraway, and simmer until everything is tender.
In a saucepan, over low heat, make a light roux from the butter and flour. Slowly pour in the cream, and add the salt and sugar. Simmer on low just until combined.
Add the cream sauce to the mushroom broth, and whisk together to combine. Ladle the soup into bowls, and top with slices of hard-boiled egg.Oct 26, 2009 12:21 pm
